Puff Pancake with Blueberry Sauce

My kiddos loved it! If you don't want to make the sauce, you can buy a can of blueberry filling at the store and just warm it up. I also add whipped cream. Makes it look pretty and even more fun for the kids.

And I wanted to let you know that the hubs & I are reading "Sacred Marriage" right now--reading 1 chapter a week and doing the study guide questions to go along with each chapter. We're using this as our devotional time together and it is AWESOME! Thank you :)

That looks good enough to eat! Oh, that was the point, I guess. Well, Stacie, I'd have to opt out, it looks too sweet, and I try to stay away from them for awhile after Christmas. Do tell me how it is and when you serve it. I mean, is it dessert or b'fast?

Catherine, it's breakfast. It is surprisingly not that sweet. the pancake has little sugar in it (you could use honey or sucanat) and whole wheat pastry flour would work really well.

I doubled my recipe and put it in a large pie plate.
